Richard attracts people from all over the world to participate in his classes, in particular from America, Europe and Scandinavia. An impressive roster of guest chefs come to teach with Richard including Angela Hartnett, Clare Smyth, Mark Hix, Atul Kochhar, Michael Caines, Valentine Warner, Will Torrent, Bruno Loubet and Nathan Outlaw, many of whom return.
Originally trained as a baker in Brittany, Richard has been in England since 1988 and is now very much an Anglophile. With 20 years’ experience in the kitchen, baking, consulting and teaching behind him, Richard went to Bath in 2005 to open The Bertinet Kitchen cookery school, instilling passion for food through his teaching in the school.
Richard has also taught his baking skills to the brigades at a number of leading restaurants including Hix Restaurants and the Soho House Group and The Bertinet Bakery supplies direct to consumers via both Waitrose Supermarkets (28 branches across the South) and its retail stores and café in central Bath. Richard’s signature sourdough loaf has won the Soil Association Organic Food Award for both 2010 and 2011.
